Erica Jensen grew up in Baton Rouge, Louisiana, and attended Baton Rouge High School. She lettered four years in volleyball and three in swimming and diving in high school and earned team MVP honors in each sport. She also lettered twice in drama.

Jensen enrolled at Lake Forest College in the fall of 1985. She won the Midwest Athletic Conference for Women championship that year in one-meter diving and was named the team's Most Improved. She repeated as team MIP the following year and earned MVP honors as a junior and senior. She won both the one-and three-meter diving competitions at each of the next three MACW Championship Meets and set school, conference, and conference meet records in both events that still stood at the time of her induction. Jensen earned her first All-American honor in 1987 when she placed 11th at the NCAA Division III National Meet in three-meter diving and 16th off the one-meter board. Her best finish at the national meet came the following year when she was eighth in the three-meter and 12th in the one-meter. She placed 12th in three-meter diving as a senior.

Jensen was a social affiliate of the Alpha Pi Delta sorority while at the College.

After graduating from Lake Forest in 1989, Jensen worked in freight transportation sales.

She lists her performance at the 1988 NCAA Division III National Championship Meet with her parents in attendance among her greatest lifetime accomplishments.
